Yogurt & Sponge Finger Parfait

Most of the fat in this dessert is monounsaturated and comes from the almonds. The berries and passionfruit provide fiber, vitamin C and antioxidants..

Need: 3 cups lowfat yogurt, 1/4 cup sugar, strained juice from 12 passionfruit, 4 1\2 oz sponge finger biscuits cut to fit parfait glasses, 3 cups fresh or frozen rasberries, 1/2 cupslivered almonds.. toasted,

How?: Place the yogurt, sugar and passionfruitjuice in a bowl and mix well to combine. Divide one third of the mixture among six 1 cup parfait glasses. Top the yogurt mixture with a layer of sponge fingerbiscuits, then with a layer of raspberries. Repeat with another layer of yogurt, biscuits and reaspberries and top with a layer of yougurt. Top with the remaining raspberries and the toasted almonds. Refrigerate for 1 hour and serve.

Note: You could use strawberries if you wish in place of the raspberries.

Nutritional Value: 369 calories, 7.7 g fat, 37.8 g Carbs, and 18.2 gs fo Protien
